Antioxidants and environmental stress: Spectroscopic study on stability of natural compounds and their interaction with a molecule of protein in an in vitro model

Abstract

The stability of eight hydroxycinnamic acids was studied by UV-Vis absorption spectroscopy during long-term incubation. The obtained results suggest that their stability is dependent upon their individual structure and duration of incubation.

The possibility of binding of these compounds to bovine serum albumin was investigated by tryptophan fluorescence quenching method. The binding constants, number of binding sites and the free energy changes were determined and compared with each other.
