Abstract

Effect of hydroxycitric acid, aminoguanidine, and uric acid on glycation of aspartate aminotransferase by methylglyoxal was monitored using enzyme activity assessment, absorption UV-VIS spectra, fluorescence of advanced glycation end-products measurement, and SDS-PAGE
