Curcumin oligomers and their stability in the gas phase investigated by electrospray ionization mass spectrometry

Abstract

The collision-induced experiments with mass-selected ion using ESI-MS are useful tools for the detection of the most significant cleavage pathways of compounds of natural products such as curcumin and its adducts or complexes with metals (e.g. copper). Additionally, the energy (in kJ/mol) necessary for each particular cleavage is experimentally accessible as the first derivation of the sigmoidal function (dependence of the intensity of the daughter ion on the collision intensity), which is essential for the decay description.
